It’s 4th of July week here in the U.S. We don’t have huge plans this year as my Mum is under the weather with strep throat and so it will probably just be us hanging out and we may try and go to the city’s fireworks tomorrow evening. The holiday is reflected in the meal plan this week, but it’s a slimmed down version of what I would typically cook as it will just be the 4 of us for dinner this year.
A friend of mine is visiting this week from California, so we are planning on spending quite a bit of time with her over the weekend; which should be a ton of fun! We have been friends since 2009, when we met online and we’ve stayed in touch over the years, texting, Skype, Facebook etc. and we’re now going to get the opportunity to meet. If I’m quiet over the week, this could be why. We do have plans to go to Universal Studios, the Beach, swimming & dinner, so there will be plenty of pictures going up on on my Instagram. Now let’s just hope the weather co-operates!
While I sat and meal planed yesterday, I decided to pull out my binder that I keep all of my printed or magazine favorite recipes in. I forgot how many good recipes were in there! There are a ton of them that we haven’t made in YEARS. So guess what’s going to be showing up on the meal plan? Since I went through all of my recipes, in just the binder, I now have a meal plan for each week up until the kids start school! I can’t believe how much I managed to accomplish yesterday!
A couple of the meals this week do not have recipes per say. Two of the dishes are what that my Mum taught me how to make and the other is just one of those that I kinda threw together. If you can even call it a recipe. I put the stuff in the crock pot and turn it on. The Hubs has installed a Recipe builder to my blog, so I will be adding recipes and sharing those in addition to the meal plan posts. I am going to try and figure out the recipe thing this week and will come back and link this post as I get them up on the blog.
Since our plans for this week aren’t really set in stone, I planned a lighter/easy to move around meal plan for this week. I did plan one night as a “dinner out” night as I we were planning on doing dinner with my friend this week. So let’s take a look at this week, shall we?
ON THE MENU THIS WEEK:
- Monday – Baked Macaroni & Cheese
- Tuesday – Slow-Cooker Ribs, Corn on the Cob, Baked Potatoes & Salad (recipe for ribs to come)
- Wednesday – Sams Club Take & Bake Pizza
- Thursday – Sheet Pan Chicken Fajitas
- Friday – Dinner Out
- Saturday – John Wayne Casserole
- Sunday – Roast Pork Tenderloin with Pan Sauce, Roast Potatoes & Veggies.
